Meats offered in our restaurant are carefully selected, focusing on area of origin, rearing methods, feeding and age. Our philosophy rejects intensive farming which doesn’t respect the beast, we rather support small and authentic institutions which give importance to lost and rare breeds with a great history behind, protecting them through a careful and respectful feeding, so as to ensure them the healthiest living possible. According to these assumptions, in 2019 we asked a farm located in Monte Grappa to raise for us the “Burlina“, a Veneto native breed, with an apple special diet. A further quality parameter is “maturation“: ensuring a hunging period range from 30 to 200 days, we obtain a firmer and drier meat, with no excess liquids which results in more intense taste and scents. And finally, once you made your choice, our staff will reach you at the table showing you the cleaned and weighed meat and providing you with all the related explanations.
